Recipe of the month:
Enjoy Farfelle pasta in a white wine mushroom sauce.
Serves 6
Ingredients:
- 3 Tsp – Butter
- 12 oz. – Mushrooms (shiitake, oyster, porcini, etc.)
- ½ Cup – Chopped Onion
- 1/3 Cup – Finely chopped shallots
- 1 Tbsp – Minced Garlic
- 1 ½ Tsp – Salt, divided
- ¼ Tsp – Ground Black Pepper
- ¼ Cup – Dry White Wine
- 2/3 Cup – Whipping Cream
- ½ Cup – Shredded Parmesan Cheese
- 2 Tbsp – Fresh Chopped Parsley
- Fresh minced parsley for a garnish
Instructions:
- Cook pasta according to package directions. Drain. Keep pasta covered in a large pot.
- Melt the butter in a medium pot over medium-high heat. Add the mushrooms, onion, shallots, garlic, 2/3 of the salt, and pepper; cook 12 minutes or until liquid evaporates and mushrooms are tender, stirring occasionally. Add wine; cook 2 minutes or until liquid evaporates, stirring occasionally. Remove from heat.
- Add the cooked vegetables to cooked pasta. Add whipping cream, cheese and chopped parsley, tossing gently to coat. Stir in remaining salt. Garnish with minced fresh parsley, if desired. Serve immediately

Bananas Foster
Serves 8
Ingredients:
- 4 - Bananas
- ¼ Cup - Butter
- 1 Cup - Packed Brown Sugar
- ¼ Cup - Crème de Banana Liqueur
- ½ Tsp - Ground Cinnamon
- ¼ Cup - Dark Rum
- 2 Cups - Vanilla Ice Cream
Instructions:
- Peel bananas; cut each banana in half lengthwise. Cut each half into 2 pieces.
- Melt butter in a large nonstick skillet over medium heat. Stir in brown sugar, liqueur, and cinnamon. Bring to a simmer, and cook for 2 minutes. Add bananas; cook for 4 minutes or until tender. Remove from heat. Add rum to pan. Ignite rum with match (BE CAREFUL). Stir gently until flame dies down. Serve over ice cream.
